Tavern at Borzanka - Tavern with Tradition
The Highland atmosphere, customs, and the captivating history that began in the 18th century. Located in Podhale and restored by true highlanders, Karcma u Borzanka was established as a historical Inn with a coach house. In the 1970s, it was taken over by the State Treasury with the aim of creating the Regional Museum of the Nowy Targ Land. However, these plans did not come to fruition, which led the current owner of Karcma, Michał Borzęcki, to seek the recovery of the Inn in the 1990s. It was then that a new rebuilding began, culminating in the opening in 2003 of the oldest Inn in Nowy Targ, named Karcma u Borzanka.
What does the chef serve?
The initiative to create the dishes, decor, and interior was inspired by highlander tradition. Karcma is renowned for serving traditional Polish cuisine. In addition to unique menu offerings, one must try the Tenderloin in apple and plum sauce following the owner's recipe, Grilled Pork Loin under Oscypek cheese, Lamb in its own sauce, and Beef Goulash. The Inn also has a house specialty, which is an extraordinary highland platter featuring traditional delicacies. The menu also includes highlander drinks, such as Tea Mulled Wine and Highland Warming Drink.
The highlander atmosphere is complemented by the interior of the venue, where old photographs capturing the Inn from yesteryears are displayed, along with massive wooden tables, traditional highlander materials, and decorations. To pay homage to tradition, the restaurant staff serves in traditional highlander attire.
